2-3lb Ontario Silkie/Black chicken
1/4 cup Chinese cooking wine
7/8oz fresh or dried ginseng
3 tbsp dried shrimps
4 round slices ginger, 1/4” thick
8 Chinese red dates
68 fl. Oz chicken stock
34 fl. Oz cold water
1/4 cup goji berries
  salt to taste


Serves 4 – 6

In a 4 quart stock pot, blanch chicken in boiling water for about 5 minutes; drain and rinse in cold water. Rinse goji berries, ginseng, dried shrimp, ginger and dates in cold water. Add to pot along with stock and water. Bring to a boil then reduce heat to a gentle simmer for 3 hours.

Season with salt to taste.
