Ingredients
| 2-3lb | Ontario Silkie/Black chicken |
| 1/4 cup | Chinese cooking wine |
| 7/8oz | fresh or dried ginseng |
| 3 tbsp | dried shrimps |
| 4 | round slices ginger, 1/4” thick |
| 8 | Chinese red dates |
| 68 fl. Oz | chicken stock |
| 34 fl. Oz | cold water |
| 1/4 cup | goji berries |
| salt to taste |
Instructions
Serves 4 – 6
In a 4 quart stock pot, blanch chicken in boiling water for about 5 minutes; drain and rinse in cold water. Rinse goji berries, ginseng, dried shrimp, ginger and dates in cold water. Add to pot along with stock and water. Bring to a boil then reduce heat to a gentle simmer for 3 hours.
Season with salt to taste.
